This came in the midst of an improvisation, a couple of nights ago we were picking up and we get a group of guests who wanted to eat and were 11 people, and not other proteins had for them, or accompanying to remove the dishes we had that night at the Tasting Menu. What we did was to bring together various elements that we always have in the production and obtained this dish was very interesting.
